Super Crunch Salad

1 small head cauliflower, stem and leaves removed, broken into 1-inch pieces
3 cups fresh broccoli, broken into 1-inch pieces
10 oz grape tomatoes, quartered
1/2 cup finely chopped red onion
1 cup celery, diced
2 cups shredded sharp cheddar cheese
1/2 cup sunflower seeds

​Add veggie ingredients to large bowl and toss to combine.

Dressing
1 cup mayonnaise
1/2 cup grated parmesan (like Kraft)
1/4 cup sugar
2 tbsp. relish
1/4 tsp cayenne pepper
2 tbsp. Dijon mustard
1 tsp black pepper
1 tsp paprika

Whisk dressing ingredients until mixed well. Pour over veggies and coat well. Refrigerate at least 2 hours. Just before serving, chop one heart of Romaine lettuce into bite sized pieces, incorporate lettuce into the salad.
