Sausage, Egg & Cheese English Muffin Casserole

4 English Muffins
2 cups shredded sharp cheddar cheese
16 oz pork sausage
one red bell pepper, diced
one green bell pepper, diced
1/2 large red onion, chopped
1/4 cup basil, thinly sliced
12 eggs, beaten
4 cups milk
1 tsp seasoned pepper
1 tsp salt
1 tbsp garlic powder
2 tsp dijon mustard
3 green onions, green parts thinly sliced

Coat 9×13 in cooking spray. Break muffins into chunks and place in baking dish. Sprinkle one cup of cheese over muffins. Cook sausage until done. Using slotted spoon, spread over muffins and cheese.
Cook peppers and onions until just softened, spread over sausage. Top mixture with basil. In a large bowl, whisk together eggs, milk, pepper, salt, garlic powder and dijon. Pour wet mixture over sausage mixture.
Bake at 325 one hour. Add remaining cup of cheese with 10 minutes left. Let stand for 10 minutes before serving. Garnish with green onions.
