Cheese Ball Pumpkin

16-ounces cream cheese, room temperature
1 cup shredded cheddar
2 tbsp finely diced onion
2 tbsp finely diced red bell pepper
1 heaping tbsp chili powder
1 tsp garlic powder
Nacho cheese Doritos Chips, finely crushed
Stem from a bell pepper
In large bowl with hand mixer, mix first 6 ingredients. Mold cheese mixture into a ball using plastic wrap. Refrigerate a couple of hours. Roll cheese ball around in crushed chips, coating evenly. Place cheese ball on serving platter. Carefully place bell pepper stem on top of cheese ball. Surround with blue corn tortilla chips.
