4 boneless chicken breasts
2-cups grated mozzarella, divided
1/4 cup Parmesan cheese
chopped fresh basil
Cut a pocket in side of each chicken breast and drizzle both sides and inside pocket with olive oil. Sprinkle seasonings (to taste) on both sides and in pockets. In each pocket add at least one tablespoon of marinara sauce, mozzarella and pepperoni slices. Add chicken to a prepared baking dish and top each breast with more marina, mozzarella, Parmesan and pepperoni. Cover loosely and bake at 375 degrees 30 minutes, uncover and bake another 10 minutes then top with basil before serving.
