1 cup plain whole-milk Greek yogurt
2 tablespoons freshly squeezed lemon juice
1 tablespoon honey
1 tablespoon extra-virgin olive oil, plus more for drizzling
Salt and freshly ground black pepper
Twelve 3-inch-long triangles of seedless red watermelon, about 1 inch thick
1/4 cup small mint leaves
Mix yogurt, lemon juice and honey, chill. Drizzle olive oil over both sides of watermelon, season with salt & pepper. Grill over hot grill, about 1 minute per side. Top slices with yogurt mixture and mint.
