6 ears corn on the cob, shucked
1/4 cup chopped red onion
3 tbsp olive oil
juice from one lime
2 tbsp chopped fresh cilantro
salt & pepper to taste
1 container crumbled feta cheese
spread butter on each corn cob and sprinkle with salt & pepper….wrap each cob in aluminum foil. grill over high heat, turning each cob one quarter turn every 5 minutes. remove from heat and unwrap. when cool enough to handle, cut corn from the cob and place in mixing bowl. Add all ingredients except feta, mix well. Stir in feta cheese, refrigerate at least one hour prior to serving.
