olive oil
1-1 1/2 chicken breast, cut into 1 inch pieces
8 ounces andouille sausages, sliced
1 green pepper, sliced into thin strips
1 red pepper, sliced into thin strips
1 red onion, sliced thin
3 tbsp Cajun seasoning (more or less to taste)
1 tsp smoke paprika
1 tsp dried Italian seasoning
2 cloves garlic, finely chopped
1/2 cup fire roasted, crushed tomatoes
1- 1 1/4 cups chicken broth or stock
1/2 cup half & half
2 tsp brown sugar
1/4 cup Parmesan cheese
8 ounces cooked penne pasta
chopped fresh parsley
Heat olive oil in hot pan and sprinkle chicken with some of the Cajun seasoning. Cook chicken until cooked through and slightly browned, remove. Add sausage and cook until slightly browned on both sides, remove. Add pepper, onion, garlic, brown sugar and spices and cook until veggies are crisp tender, stirring often. Stir in crushed tomatoes. Add broth and half and half, bring to a simmer. Stir in Parmesan cheese, mixing well. Return meat to pan, mix well and heat through. Stir in penne and heat 2-3 minutes. Serve with fresh parsley and more Parmesan.
