Sour Cream, Sausage & Egg Christmas Casserole

24 oz pork sausage
10 eggs
1 cup sour cream
1 onion, small dice
1 green pepper, small dice
1 red pepper, small dice
2 cups grated cheese
2-3 green onions thinly sliced, for garnish

Preheat oven to 350 degrees and prepare a 9 x 13 baking dish with cooking spray. Cook sausage, onion, and peppers, drain. In a separate bowl mix eggs, sour cream and cheese. Once egg mixture is thoroughly mixed, add sausage and veggies. Pour into your prepared dish. Bake for 30-45 minutes or until cooked through.
