Unstuffed Stuffed Peppers

Olive oil

1 medium onion, diced

1 clove garlic, minced

1 lb ground beef

2 large green bell peppers, cut into 1-inch squares

1 15 oz can diced tomatoes with juice, do not drain

1 tbsp dried basil

1tbsp dried oregano

Salt and pepper to taste

1 cup uncooked brown rice

1 and 1/2 cups beef stock or broth

1/2 cup grated parmesan cheese

1 8 oz can tomato sauce

1 tbsp Worcestershire sauce


Heat olive oil over medium heat in large skillet.  Sauté onions and garlic a few minutes.  Add ground beef and cook til browned, stir in green peppers and cook 4-5 minutes until just soft.  Stir in diced tomatoes, seasonings and rice.  Add stock and mix well.  Bring to a boil, cover and simmer on low heat about 30 minutes until rice is cooked.  Stir in cheese, tomato sauce and Worcestershire sauce and heat through.  Yummy
