41/2 Tsps grated lime zest
1/2 Cup lime juice (ends up being 3-4 limes)
4 Egg yolks
1 (14-ounce) Can sweetened condensed milk
Whipped cream (optional)
11 Chocolate graham crackers
3 Tbsp granulated sugar
5 Tbsp melted butter
For filling: Whisk zest and yolks in a bowl until tinted light green. Beat in the milk and juice, set aside at room temp to thicken.
For Crust: Crush graham crackers, then mix in sugar and butter and mix well. Press into muffin pan to form a cup. Bake 8 minutes at 325 degrees. Let it cool 15 minutes.
Pour filling in crust and bake 15-17 minutes. Cool to room temperature then cover and refrigerate 2-3 hours and top with whipped cream if desired.
