1 jar Private Selection Hot Huli Huli & Rum BBQ sauce (at Kroger condiment aisle)
1 can pineapple chunks in pineapple juice (reserve juice)
3 large boneless chicken breasts, cut into bite size chunks
1 cup mushrooms, halved
1 red pepper, cut squares
1 yellow pepper, cut in squares
1 large red onion, cut in squares
In a mixing bowl, combine 3/4 jar of BBQ sauce with pineapple juice, mix well reserve half cup for basting and pour remainder of sauce over chicken. marinate in fridge 30 minutes- 2 hours. Thread chicken, veggies and pineapple chunks onto skewers. grill over medium high heat, basting with reserved sauce, turning every few minutes. serve over rice.
