Dick Daniels’ Easter Deviled Eggs

1-dozen hard boiled eggs, peeled
Food coloring
Apple cider vinegar
1-2 tbsp mayo
1-2 tsp yellow mustard
1-2 tbsp sweet relish
Salt & pepper to taste
Paprika

While eggs are boiling, set up 3 or 4 bowls of cold water and add 1 tsp vinegar to each. Then add food coloring of your choice (going for pastel colors). Cut eggs in half and remove the yellow into a small mixing bowl. Drop the egg white shells into the food color bowls. While eggs are soaking start making the filling. Mash eggs into a fine crumble with a fork then add 1 tbsp mayo, 1 tsp mustard and heaping tbsp relish, along with salt and pepper to taste. Mix well. Add more mayo, mustard, relish until you get your desired consistency. After egg white shells are the color you like then drain and rinse them. Fill with egg mixture, sprinkle with paprika. refrigerate at least an hour before serving.
