Apple Shortbread Crumble Bars

Base & Topping:
1 stick unsalted butter, melted
2 cups all purpose flour
1/2 cup white sugar
1/2 tsp baking powder
Pinch of salt
1 egg
Topping:
1/3 cup oats (not instant)
Filling ingredients:
3 granny smith apples, pealed and diced
1/4 cup flour
1/4 cup brown sugar
1/2 tsp cinnamon
1/4 tsp nutmeg

Grease 8 x 8 baking dish. Mix together all Base ingredients (no oats yet). Press 2/3 of mixture into baking dish. Bake 15 minutes at 350 degrees until slightly golden. Add oats to remaining base mixture, Set aside. For filling: mix all filling ingredients well in a bowl. pour apple mixture over base/crust and add oat crumbles on top. Bake 30 minutes or so until golden brown. Serve in squares with vanilla ice cream and caramel sauce.
