Pancetta-Wrapped Shrimp with Honey-Lime Glaze

6 slices pancetta
15-20 uncooked, large shrimp, peeled (tail left on) and deveined
1/4 cup honey
juice from one lime
1 tsp hot water
2 tbsp minced fresh cilantro

Cut each slice of pancetta into 3 strips, wrap one strip each shrimp and secure with a toothpick. Place shrimp on baking sheet. In small bowl, whisk together honey, lime juice and water. Reserve a couple of tablespoons for brushing after baking. Brush half remaining mixture over shrimp. bake 5 minutes. Turn shrimp and brush with remaining mixture. Bake another 5 minutes and remove from oven. Then brush with reserved honey mixture and sprinkle with cilantro. Enjoy!
