Meat Loaf Cup “Cakes”

2 large eggs, lightly beaten
1/4 cup milk
1/4 cup ketchup
1/2 cup bread crumbs
1/4 cup Parmesan cheese
1/2 onion, minced
1 teaspoon prepared mustard
1 teaspoon salt
1 tsp garlic powder
1 tsp dried Italian seasoning
1 tsp pepper
2 pounds lean ground beef (I used 93%)
Additional ketchup, for topping

Mix all ingredients up to meat in large bowl until well combined. crumble in the meat and incorporate. grease muffin tins well with spray. press meat mixture into 12 muffin cups. add dab of ketchup on top of each meat cup and spread to cover. bake for 25-30 minutes at 350 degrees. Remove from cups immediately so grease does not soak into the meat loaf cups. Enjoy!
