Spicy Shrimp and Sausage Skewers

1 lb jumbo shrimp, peeled
2 andoulle sausage links, sliced to thickness of shrimp
olive oil
2 tbsp cajun seasoning, divided
1/3 cup mayo
1 tbsp spicy mustard
juice from half a lemon
thinly sliced green onions, for garnish
wooden skewers, soaked in water for 30 minutes

In a bowl add shrimp and mix with 1 tbsp cajun seasoning and drizzle with olive oil. Tuck sausage slices on the inside curve of shrimp and place on skewer. Grill over medium high heat 2-3 minutes a side. For dipping sauce, combine mayo, mustard, lemon juice and 1 tbsp cajun seasoning…stir well. Garnish with green onions.
